The Season of Blackberry Picking in Victoria – Here’s What to Make with Them

The season of blackberry picking has arrived here in #YYJ. We have searched and rounded up some of our favourite blackberry recipes – so once you have buckets sitting around your home you can turn them into tasty treats for the whole family to enjoy!

Blackberry Crumb Bars

These cheery, blackberry crumb bars are a summertime favorite and make a perfect afternoon snack or simple dessert. 

Prep Time: 20 minutes

Cook Time: 30 minutes

Total Time: 50 minutes

INGREDIENTS

For the crust and topping
  • 3 cups all-purpose flour
  • ¾ cup cold butter, cut into pieces
  • ¾ cup granulated white sugar
  • ½ teaspoon salt
  • 3 large eggs, beaten
For the blackberry filling
  • 4 cups blackberries, halved
  • 1 tablespoon fresh lemon juice
  • 1 tablespoon cornstarch
  • ¾ cup granulated white sugar
INSTRUCTIONS
  1. Preheat oven to 375 F. Grease a 9 x 13 inch baking pan. Stir together the flour, ¾ cup white sugar and salt, cut in the butter with a pastry blender until the butter is in pea-sized pieces. Stir in the beaten eggs with a fork. Press half of the dough into the bottom of the baking dish.
  2. Cut the blackberries in half, toss them with the lemon juice, cornstarch and sugar. Sprinkle them over the crust in the pan. Sprinkle with the other half of the dough mixture. Bake at 375 F for 30-35 minutes, or until lightly browned. Let cool completely.

Blackberry Sorbet

This sorbet recipe is super yummy, and it comes together in less than five minutes – our kind of dessert!

INGREDIENTS

  •  3 cups of frozen berries (we used blackberries this time)
  • 1/2 cup sugar
  • 2/3 cup of cream
  • 1 teaspoon vanilla

INSTRUCTIONS

Toss all the ingredients in a blender or food processor and blend until smooth and creamy. It will be a great soft serve texture, but if you prefer your sorbet to be a bit harder you can put it in the freezer for about an hour for a more scoopable texture.

Blackberry Hand Pies

INGREDIENTS

  • 1 package {2 crusts} refrigerated pie dough
  • 12 oz {2 containers} fresh blackberries
  • ¼ cup sugar
  • 3 tbsp all-purpose flour
  • 1 tbsp lemon juice
  • ½ tsp cinnamon
  • 1 egg, beaten
  • additional sugar for topping

INSTRUCTIONS

  1. Preheat the oven to 375F, and line two baking sheets with parchment.
  2. First, prepare the filling. Rinse the berries well, cut them in half, and place them in a medium bowl. Add in the sugar, lemon juice, cinnamon, and flour, and mix well.
  3. On a well-floured surface, lay out the pie crusts and gently roll them out to ¼” thickness.
  4. Using a large cookie cutter or other round object, cut out circles about 5 inches across.
  5. Place the circles of dough on the baking sheets, and spoon about 1 tbsp of filling in the center of each.
  6. Fold the dough over, and press the edges firmly with your fingertips to seal. Using a knife, gently cut 2-3 small slits on the top of each pie. Brush them with the beaten egg, and sprinkle a little bit of sugar on top.
  7. Bake for about 20 minutes, until golden brown and flaky. Let cool slightly, and enjoy!
