Tortellini skewers
1 package skewers
1 package rainbow tortellini (cooked & cooled)
Small mushrooms
Cherry tomatoes
Dressing
1/4 cup olive oil
1 Tbsp. Balsamic vinegar
1 Tbsp. Red Wine vinegar
1 tsp. fresh or dried parsley (chopped)
1/2 tsp. garlic powder
1/4 tsp each of salt and pepper
Using the cooked tortellini, mushrooms, and cherry tomatoes, alternate the order on the skewers. Place finished skewers on a platter. Mix dressing together and drizzle over skewers. Can be made ahead – cover with plastic wrap and store in refrigerator. Remove from fridge at least 30 minutes before serving.
