As anticipation builds for the upcoming Wild Blue Long Table Dinner Series, Wild Blue Restaurant + Bar is thrilled to reveal the mouthwatering menu for the July 7 event. Set against the picturesque backdrop of Whistler Village, this culinary extravaganza promises an unforgettable dining experience curated by Chef Alex Chen and Executive Chef Derek Bendig.

Guests attending the July 7 Long Table Dinner will embark on a culinary journey that begins with a champagne reception and an array of tantalizing passed canapés. The evening’s offerings include Beef Tartar with porcini emulsion atop Roesti potato, Nori Crisp with snap peas salad and miso yuzu dressing, and Hamachi delicately paired with shiso flower and ponzu gelee.

As guests gather at the long table, the dinner – served family-style – will commence. For the first course, diners will delight in the vibrant flavours of Summer Peas and asparagus accompanied by focaccia croutons, Puglia burrata, and basil vinaigrette, creating a harmonious symphony of seasonal ingredients.

The culinary adventure continues with the second course: a refreshing Chilled Gazpacho featuring side strip prawns, cucumber blossom, and a drizzle of olive oil, providing a perfect balance of flavors and textures.

As the centerpiece of the evening, guests will indulge in Chef Chen’s signature Seafood Boil, showcasing the bounty of the west coast with a mouth-watering selection of corn, potatoes, prawns, clams, Dungeness crab, and mussels. Accompanied by tomato relish and aioli, this sumptuous dish is sure to be a highlight of the evening.

To conclude the dining experience on a sweet note, attendees will be treated to a delightful Summer Fruit Tart, offering a symphony of seasonal flavours and culinary craftsmanship. The evening will culminate with an assortment of petit fours, providing the perfect finishing touch to a memorable dining affair.

The Wild Blue Long Table Dinner includes a champagne and canapé reception, four-course dinner, and all wine pairings.
