Whisky lovers looking for a reason to head into the city this autumn have a good one: Fairmont Hotel Vancouver is hosting “The Spirit of Scotland,” a four-part Scotch dinner series spotlighting four of Scotland’s most storied whisky houses — House of Hazelwood, The Dalmore, The Macallan, and Glenmorangie.

Held in some of the hotel’s most striking event spaces, each evening pairs rare single malts with a five-course tasting menu built around Pacific Northwest ingredients. Guests will hear directly from brand ambassadors and whisky specialists about how cask maturation, aging, and technique shape each pour, from bright Highland expressions to deep, sherry-cask finished drams.

Tickets are $450 per person, plus tax and service charge, and are available through OpenTable and on Fairmont Hotel Vancouver’s events page.

The Lineup

House of Hazelwood — September 17 Hosted by Managing Director Phil Keene, the series opener explores five rare expressions from the Gordon family’s private whisky collection, some aged up to 46 years. The five-course menu includes Kanpachi Crudo, Langoustine, Game Bird Cappelletti, Sungold Lamb Saddle, and a Caramelized Honeycrisp Apple dessert.

The Dalmore — October 15 National Brand Specialist Emma Coady leads guests through The Dalmore 15, 18, 35-Year-Old, and 2009 Vintage, opening with a signature Dalmore 12 cocktail. The tasting highlights the house’s sherry and Port cask maturation, paired with Hamachi Tartare, Butter-Poached Lobster, Beet & Walnut Cavatelli, Venison Loin, and Valrhona Chocolate with Seville Orange.

The Macallan — November 5 Brand Specialist Adam Collins guides guests through six expressions from The Macallan’s Double Cask and Sherry Oak collections, including the Sherry Oak 12, 18, and 25 Years Old. The menu features Hokkaido Scallop Crudo, Seared Foie Gras, Egg Yolk Raviolo, 24-Hour Braised Short Rib, and Aged Comté.

Glenmorangie — November 26 The series closes with Bryan Simpson, National Brand Ambassador for Ardbeg & Glenmorangie and recently named “Best Scotch Whisky Ambassador” at the 2026 World Whisky Awards’ Icons of Whisky. His seven-whisky lineup runs from The Original 12 Years Old through The Quinta Ruban 14, The Lasanta 15, The Infinita 18, The Altus 25, Signet, and a preview pour of the soon-to-be-released Harrison Ford Limited Edition. The evening’s menu includes Burrata Panna Cotta, Venison Tartare, Agnolotti del Plin, Dry-Aged Duck Breast, and a Golden Orchard dessert with white peach and Madagascar vanilla parfait.

With only four evenings on offer, each capped at an intimate scale, this is a chance to taste library-level expressions — including whiskies aged past four decades — alongside a kitchen team clearly leaning into seasonal, West Coast ingredients rather than a generic gala menu.
