Pizza Rubato, celebrated for its fresh take on authentic Neapolitan-style pizza, will open its newest location at Park Royal in West Vancouver next month. Opening in March, the spot will bring its 300-year-old Neapolitan pizza recipe to the vibrant shopping hub, inviting the North Shore community to experience its signature pies and newest menu items.
Founded by Ahmet Turunç, Pizza Rubato was born from a longing for a taste of his Italian mother’s fresh, wood-fired bread, and for him, the crust of a true Neopolitan pizza mirrors the comforting scent of his younger years. “Pizza is more than just a quick meal; it’s a deep connection to my childhood each time I fire up the oven,” he says.
The newest space is located at 701 Park Royal North in West Vancouver and comprises 50+ seats throughout 2,000 square feet. “We are so excited to be joining the Park Royal community, where sharing great food with family is such a core part of lifestyle in that area,” says Ahmet.
Staying true to its creative roots, Pizza Rubato’s Park Royal location will feature its signature pistachio pizza alongside new flavours such as Cacio Parma and Nduja Potato, while also offering its popular wood-fired panuozzos, giving guests more than just pizza to choose from. In addition, the location has partnered with Cannoli King Bakery to introduce authentic Sicilian cannoli as a permanent menu feature.
“Rubato” nods to the restaurant’s philosophy – a rubato rhythm in music where one hand plays a written tempo while the other creates a new rhythm. The restaurant makes every dish with one hand firmly rooted in Italian tradition, while the other is free to create unique combinations of flavours. Every pie is treated with the utmost care, starting from a 48-hour fermentation process using premium 00-type flour to create the perfect dough base. Once ready, the dough is hand-spun, decorated with the highest quality ingredients and cooked until crispy and golden in a brick oven. The full menu offers a symphony of flavours, from the much-loved classics to the infamous favourite, the pistachio pesto pizza.
